INSTRUCTIONS FOR USE
Make pasta dough using durum wheat flour and egg, using instructions included with the pasta maker. It is easier to work with if the dough is on the drier side. If it is too moist then it tends to stick to itself or will not cut easily, so add a little more flour if you have problems with the consistency.
Begin by rolling your dough without the cutting sections of the machine attached. To do this, clamp it to the edge of a table or work surface using the hole on the righthand side of the pasta maker and attach the handle. Dust the dough, rollers and your work surface with flour and roll your dough through on the thickest setting (7) turning the handle
to pass it through the machine. It can be helpful to have two pairs of hands to do this, one to guide the pasta as it emerges from the rollers.
Fold the flattened dough in half and roll through again 5-6 times. Keep dusting the dough with flour as you work, rolling it through each of the other settings down to the thinnest (1). To move the knob and change the settings pull it outwards away from the machine before turning the knob.
To make tagliatelle or spaghetti, slide the grooves of the cutting part of the machine into place and move the handle from the base of the machine to the section which you want to use and then feed the pasta sheets through this. Keeping the pasta well-floured helps to stop it from sticking together when it emerges.
